Recipes from holtieshouse


Here are three quick, easy recipes, you can believe they are easy because I

can make them, I cook to live, rather than live to cook and don’t have the

patience/skill to try for difficult stuff.


***Avocado Chilli Dip (guacamole)


***Ingredients


1 Avocado pitted and mashed

1 or 2 teaspoons of crushed chilli, depends on just how hot you like

your dip.

(For the wimp version use sweet chilli sauce to taste.)

Juice of 1 small lemon

Third of a cup of mayonnaise

1 finely chopped small red onion, (or 1 cup chopped shallots)


***Method


Mix all ingredients together in a food mixer until smooth

Refrigerate, keeps well for 2 – 3 weeks, (it’s always gone by then.)

Tip – Improves with age, so make it a couple of days early.

(try to save some for the party though!)



***Easy Omelet


I read this recipe in a magazine and just KNEW it wouldn’t work,

It did !!!!!

***Ingredients


2 eggs per person

Fillings to taste, (I used diced ham, chopped capsicum, and

shredded cheese)

Salt and pepper to taste.


***Method.


Place all ingredients into a large freezer bag

Shake well to mix ingredients

Tie top of bag and put into a pot of hot water, bring to boil

Cook until set

Remove omelet from bag, slice and serve immediately.


***Easy Fruit Slice


***Ingredients


I kg mixed dried fruit

2 cups of orange juice

2 cups of self raising flour


***Method


Soak the mixed fruit in the orange juice overnight.

Stir in the self raising flour, mix thoroughly.

Put mixture into 2 greased slice trays.

Preheat oven to 160 degrees

Cook for 1 hour at 160 degrees


***Variations;


Use 425 g can of crushed pineapple instead of orange juice

(may need a little more fluid ? see below.


***Christmas variation;


To the original recipe add a small handful of crushed nuts (Behave !)

A good slurp or a couple of good sloshes of your favorite spirit.

(I used Bundaberg Rum Liqueur Smoooooth !)

Note

A certain blogger who shall remain nameless, but his name starts with

Jerry, has cast doubts that the cooks among us would not be able to use

these recipes because they used slightly different terms here and there, I

would like to assure him that I have the utmost confidence in all the rest of

your abilities to overcome small hurdles like these, but for Jerry I have

done the conversions !!

Conversion factors

1 kg = 2.2 lbs

425 g = your can size nearest to 1 lb.

160 deg C = 325 deg F = "moderatley cool oven"

I'm going to assume you can work out things like;

1 cup

1 teaspoon

Slurp, Slosh, Handful, 1 hour, mashed, chopped and other Chef type talk.

This has created a doubt in my mind about going ahead with the sharing

of knitting patterns, as I'm not sure what the conversion factors are for;
Purl, (could be Pearl ?) Plain, (could be Plane ?) slip a stich, cast on, cast

off, knit two together, and when we get to 20 g balls, well ! stop that...

I mean wool....
You're getting my drift here I hope.

Well, who'd a thunk you could make scrambled eggs in a bag? That would be handy camping out.

These are great recipes. I'm all for easy too. I love to cook and bake, and the easier, the better!

Peter ~ These recipes may work down under, but if we use these temps and amounts, disaster will ensue! P.S. ~Glad to see you're back with the stuff correctly lined up on the left (at least in IE). Hi Peter ~ Dorrie gave me a variation on the fruit slice.
Make 2 cups black coffee and soak
fruit in that. Then add the 2 cups of S.R flour and a small block of fruit & nut chocolate cut
small. I tried it & grated the chocolate. Either recipe can be make into a fruit cake, but I prefer the slice version.

The recipes were a kick! As for the knitting pattern... I came across the pattern while "organizing" this past weekend. ROFL I'd forgotten I had it. I don't knit though, maybe I need to pick it up again. I'm pretty sure we're talking the same pattern here... ;-)

I've never cooked eggs or an omelet that way but I intend to try it soon.
